Our mozzarella sticks are undoubtedly the stretchiest and most delicious mozzarella sticks on the East side of the Mississippi. Don’t believe us? Keep reading to find out just how our delicious, fried sticks of cheese are lovingly made every morning in our flagship location on the Magnificent Mile in Chicago.

Our mozzarella sticks start just as you think they would: as a block of cheese. A wonderfully thick piece of cheese. From there, our cheese cutting expert makes strategic cuts to turn this block of cheese into the mozzarella stick shape we know and love. Next, the cheese is put into a big tub while it waits to get the final treatment!

The sticks then travel to the breading station where they take their final steps before becoming a fantastically fried food! They are given a dip in our secret brine and then dipped into our flour mixture! This adds another crunchy layer to our iconic sticks! From there, they are dipped into an egg bath before getting a coating of our special breadcrumb mix! But they’re not done there. Part of how we get our mozzarella sticks so deliciously crunchy is to do this entire breading process over again! This gives our mozzarella sticks their signature crunch. And then, they’re ready for the fryer!
